This brand is aimed at providing a variety of selection of mezcals that fully comply with the category of ancestry and that the traceability of the product is carefully reviewed personally from the place of the agave to the final finish, as well as everything that surrounds the product, the Master Mezcalero, Agaves (exclusively wild), original recipes, process and elaboration of the mezcal, inputs used (water, firewood, tubs, clay or copper, etc.), laboratory studies, region and place of elaboration , for which it implies traveling great distances throughout the State of Oaxaca, and a lot of effort in the selection of the spirit distillate, for which reason we began by generating a geographical map of the places where the palenques, springs, agaves endemic and micro-endemic, in order to keep an adequate record, and also to rescue and document the largest number of recipes from the mezcal production processes, this work began on August 18, 2016, going out to the field in our first great tour of the regions of the mixteca, central valleys, southern highlands and the coast from December 15 to 20 of that same year, as well as our first investigations and generation of information which was reflected in the video.
This project is coordinated by our founding partner and Curator Mauricio Mayoral , who is currently dedicated to the search, production and selection of mezcal and agaves throughout the State of Oaxaca since 2014, to make and update this brand under his curatorship, who has been recognized for his work with national and international awards for their mixes.
